The coffee served at Project Pony is proudly roasted by White Whale Coffee Roasters — an family-owned coffee roastery founded in Far North Queensland in 2010.

For over 16 years, White Whale has built a reputation for approachable, high-quality specialty coffee, supplied to homes, cafes and communities across Australia. What began as a small local roastery has grown steadily through a genuine love of hospitality, consistency and connection, while still remaining independently owned and hands-on.

At the heart of White Whale is a belief that great coffee should feel welcoming, not intimidating. The focus has always been on producing coffees that are balanced, expressive and enjoyable to drink every day; whether that’s a comforting milk coffee, a bright and juicy espresso, or a carefully brewed filter coffee.

Coffee is roasted using a Probat UG22 roaster, with careful attention paid to consistency, freshness and flavour development. The range includes signature blends designed for everyday drinking, alongside rotating single origins that showcase seasonal coffees from producers around the world.

Sourcing relationships matter deeply to the team, with a focus on quality, transparency and long-term sustainability. Every coffee is selected to perform beautifully in busy espresso bars while still offering complexity and character in the cup.

White Whale founders Ali Slotemaker and Stephen Lee now call Woolgoolga home, with Project Pony growing from a shared desire to create something smaller, more personal and deeply connected to community and coastal life. While White Whale continues to roast and operate from Far North Queensland, Project Pony represents a new chapter — blending years of coffee experience with a slower, beachside way of living.

Project Pony exists as an extension of that same philosophy: thoughtful coffee, warm hospitality and spaces that bring people together. While Project Pony has its own distinct identity and coastal spirit, the coffee program remains deeply connected to the years of roasting experience and care behind White Whale Coffee Roasters.
